

I thought that I would post a photo of my backyard all cleaned up. My parents are having a party tonight so we heated the hot tub and the pool.

I’m in Salt Lake this week with my mother visiting my grandma. Today we went into Park City, where the Olympic Games were held a couple years ago. For lunch we ended up eating at Fuego’s. I ordered the pasta with meatballs. The sauce was very sweet due to the amount of basil which was used. However, it was incredibly tasty and I enjoyed every last bite.

(serves 1-2)
- 70g wholewheat spaghetti per person
- 50g quark (or low fat creme fraiche)
- 1 egg
- 1 egg yolk
- 1 large tomato diced
- 1/2 cup diced mushrooms (optional since i don’t really like them)
- 1 garlic clove
- 1/2 tbsp olive oil
- sprinkle of salt and pepper
Cook the pasta according to the packet instructions. Mix together the egg, egg yolk, quark, salt and pepper with a whisk until well combined. Fry off the garlic and mushrooms in the olive oil until cooked through, adding the tomatoes at the last minute until slightly soft. Drain the pasta adding it to the pan with the veggies. Add the egg mixture mixing to coat the pasta. Turn off the heat. Serve with a sprinkle of Parmesan or dairy free Parmesan. Be careful not to cook the egg over the heat.

Although I’m not Mormon, my Grandmother, Mom and I went to the Salt Lake Temple. It is simply the most beautifully built building in the city. There are so many gardens and fountains surrounding it.

One of my favorite snacks are Kale Chips and they are so easy to make.
What you will need:
- Kale
- Olive Oil
- Garlic Salt
Directions:
- Preheat the oven to 425 degrees.
- Wash your Kale and then dry it off.
- Pull the leaves off the stem and tear them into half.
- Pour a little olive oil on them. Use your hands to mix them.
- Add the garlic salt.
- Let cook anywhere from 6 to 10 minutes.

I'm not trying to lose weight. Instead I'm training my body to be stronger and healthier than it was the previous day. On here I will voice my opinions and hopefully be an inspiration to those who are on this same journey.
